Salad with spinach, apple and walnut August 6, 2006

It’s easy:

  • Baby Spinach
  • Appleslices
  • Walnuts.

The dressing is mixed of

  • walnut oil
  • vegetable oil
  • fruit-flavored wine vinegar
  • lemon
  • 1/2 teaspoon honey
  • salt & pepper


If you have the time you can roast the walnuts in half a teaspoon of butter and half a teaspoon of honey. You should take that time!  :-) .
Sometimes I add cubes of blue cheese and then I use it as a starter instead of a side dish salad.

Summer, Sunshine and Strawberries July 27, 2006

There is not much to say: Strawberries are wonderful.

They look great, they taste great and they smell great. And last not least very healthy!

I love them as they are, but also enjoy them with a little sugar and milk or cream added.

 

  • They are fantastic in homemade jam
  • On a fresh baked bread 
  • Dipped in warm chocolate and cooled down
  • In desserts and salats
  • With a little balsamico, basil and black peper

FANTASTIC SEAFOOD July 23, 2006

A week ago we came back from a wonderful holiday in in Brittany. Besides walking a lot along the beautiful coast at Saint Malo and Cancale we enjoyed the local seafood, which is one of the main attractions in Brittany and hard to avoid, because it’s very delicious

While seafood is very healthy and additional with all the walking and climbing along the coasts,  I think that I might say that we have been a lot more healthy than we are in our normal life.

Fish and shellfish ar low-fat protein foods and  popular for their acknowledged health benefits.

Omega-3 

  • Oily fish provides the Omega-3 type of fat. Omega-3 fatty acids have aroused particular interest in recent decades, and found valuable in preventing heart desease.

By the way, I joined – as a testperson - for a medical research on this matter 16 years ago when I was pregnant. I had to take pills with Omega-3 every day. The result of this research with hundreds of pregnant women showed that Omega-3 makes a positive difference for mother as for the child.

Furthermore fish and shellfish also provide useful vitamins and minerals:  

  • Vitamin A is known for promoting healthy eys and good sight, as well as it plays an important part in maintaining the skin and respiratory systems. 
  • Vitamin D is important for calcium absorption to promote the development of healthy bones and teeth.
  • Vitamin B is a important for a healthy nervous system as well as for converting digested food into energy that can be used by the body.
  • Iodine, selenium, flourine and calcium is provided as zinc is - especially in oysters and other mollucs.

Until now I only have been blogging in Denmark for the reason that my english is not that well,

- but anyway I will give it a try. It might get  better then.

For several reasons I have been interested in issues about healthy living, and furthermore a lot of healthy behaviour is starting in the kitchen preparing healthy food, so why not keeping the spirit by a weblog.

But don’t take me wrong about what I mean by healthy food. Food is fuel for life, so let it be good!
